Vinification Details: The grape indigenous varietal that must be used for the production of Prosecco rosé is 90% Glera and 10% Pinot Noir. Prosecco's vinification process requires to follow the traditional method, including the vinification in steel tanks at a controlled temperature. It is also required a second fermentation, i.e. natural fermentation in pressure tank at controlled temperature for minimum 61 days.
History: The history of this product dates back to the 15th century. Since 1948 Bosco Viticultori has embodied this tradition, safeguarding the quality of this historically precious land. The mechanical harvest is planned in the first half of September and the wine making techniques are strictly defined by the Consortium. In fact, according to these rules, Prosecco's vinification process requires to follow the traditional method, including vinification in steel tanks at a controlled temperature
Regional Information: Prosecco DOC Area - All grapes must come from Veneto and Friuli Venezia Giulia in the North-East of Italy. This area has a mild climate thanks to the influence of the Adriatic Sea and the protection of the Alps from cold winds. The soils are of alluvial origin with a clay-loam texture and debris from the erosion of the Dolomites. The soils' fertility, combined with the micro-climate, favours a moderate accumulation of sugars, minerals and microelements, allowing us to obtain a fresh, dry, fruity and recognizable wine.
